Ideal for braising,
This heavy-duty pot is ideal for braising, when food must be first browned or seared on a stove top and then finished in an oven. The cast iron gets quite hot on the stove top even when low heat is applied, and it cooks uniformly in the oven. I have made a number of meals that I would not have tried without such a pot. The enamel surface cleans up easily. This is an expensive item, but it is built like a fortress and gives the user confidence that it will do a good job for many years. I strongly recommend using silicone potholders on the job, because the pot is heavy and retains heat.

Don’t let the price throw you off. My mother and aunts have Le Creuset that is decades old and as another reviewer noted LOL this stuff will survive until the second coming and probably nuclear war.
This is AWESOME for a roast, whole chicken, stew, or soup. You can make a bounty of a meal and take it from stove/oven to the table. Then store the leftovers in the refrigerator. Buy it in a bright colour !

I agree with the other reviews on the quality, beauty etc. I will concentrate my review on the size of this pot as I had a lot of trouble deciding on size when I was making my purchase.
Le Creusets are good at many things but IMHO the biggest reason for getting one is for its ability to cook gently and slowly over a longer period of time. This lets the flavors of your dish mix together beautifully and I have found more dimensions of taste when I cook this way. It’s also very good for searing meats and then slowly cooking it until it literally falls off the bone. So the reason I got a Le Creuset oven is to make stews, pasta sauces, soups, and roasts.
The 6.75 quart, oval oven fulfilled my needs perfectly and I have found this size and shape to be quite versatile. I cook for just my husband and myself, but like many people today we both work so I like to make larger portions and freeze half. This pot will fit a double or even a triple recipe for spaghetti sauces and the like. The oval shape allows a rectangular roast or whole chicken or two smaller hens to fit inside. If you’re having friends over for dinner and want to make a bigger roast for 4-8 people, chili for a crowd, etc., this is the perfect size to have.
Some people had told me to get a round one if I do mostly stove top cooking, in order to have more even heat distribution from the round burner. I have found that the heat distributes very evenly on the oval shape, so I prefer the oval because it is a better shape for roasts.
Assuming you already have other pots and pans, and are looking to finally add a Le Creuset to your kitchen, IMO this is a very good size/shape to have.

This was my first and is still my favorite Le Creuset piece. It heats evenly, cleans up easily. It’s great for small roasts (make your gravy in the same pot, it goes right on the stovetop), chili, soups, and everything in between. I can’t imagine my kitchen life without this pot.

|The Single Most Used Pot in My Kitchen!,
We can’t live without our Le Creuset cast iron oval French oven. Not only does it cook beautifully, clean up easily and transition easily from one environment to another, but it helps me feed my army while delivering a plethora of nutrients and vitamins.
For example, I’ll cook a huge pot-roast with cabbage, carrots, potatoes and onions one night, then put all the leftovers in the refrigerator overnight. The next day I’ll just pull out the French oven, cut up the left overs, add more veggies and some beef stock and let my homemade veggie beef stew simmer all day long. No need to change containers! All the nutrient rich juices, tidbits and gravies stay inside the oven and become easily incorporated into the next meal that I prepare.
The oval oven fits larger birds for steaming, roasting and boiling. I also find that it competes for different “foot space” than my other pots and pans and thus doesn’t cause crowding on my stove top when I’ve got several burners in use. I also love the fact that I can use the upturned lid as a holding space for veggies and other items I prepare for the pot.

|We love this french oven!,
We were reluctant to spend the money on this french oven but it was worth every penny. It heats up evenly and browns meat beautifully. We use this 5qt. french oven to make great one pot meals (4 servings). Just last night we made braised short ribs that were mouthwatering. We often use this pan on the stove for browning or searing and then transfer the dish to the oven for further cooking. Other times we use it for slow cooking on the stove. Clean up with the pan is super easy. Everything just wipes right out. The pan is really heavy but that’s what makes it cook so well. My wife used to hate to cook (I used to be the only cooking enthusiast in the family) but she loves this french oven because all her recipes come out tasting so good.
